We asked on social media what questions you have for Teona Khaindrava, Senza Gluten Restaurant’s owner and co-founder. Here are just a few questions and answers!

“What are the types of gluten free flours you use in your recipes that make them so delicious?”

Thank you for asking and for the compliment! Generally speaking, a mix of several gluten free flours is needed to mimic the taste and texture of wheat flour. Every flour blend is different and some recipes work better with one blend than another. Different recipes have different needs. It’s fascinating and very much a science! 

“Do you have any dairy free or vegan options?”

Yes, we do! While our restaurant is not 100% dairy free or vegan, we do offer several options, and when adding new dishes I am always considering how we can better accommodate guests with more food restrictions. Please inform your server of your dietary restrictions before ordering, and our team would be happy to advise which dishes are naturally appropriate for your needs and which can be modified. We occasionally offer a dairy free/vegan dessert special that I am very fond of – a poached pear in red wine that is served with either mascarpone whipped cream (for guests who can eat dairy) or a decadent sorbetto (for guests who are dairy free/vegan). I hope you’ll enjoy it!

“What advice do you have for people who don’t live in New York City but who love quality gluten free food like yours?” 

I always say – the world definitely needs more dedicated gluten free restaurants! If you’re new to cooking I would suggest learning from others – take a cooking class, talk to other experienced gluten free cooks, and experiment in the kitchen – practice is very important! You could also advocate in your local community by talking with chefs and restaurant owners about the importance of gluten free options and preventing cross contact. And of course if you have the means to travel to NYC someday, we would love to meet you!
